The Story

In the mountains of San Rafael de San Ramón, Carlos Fernández Morera tends to his coffee trees with the wisdom of 65 harvests. His family has called this land home since 1895, and in that time, they've learned something profound: "Coffee is a very grateful crop. If you dedicate a little love, it responds very well."

This particular lot comes from El Diamante—"The Diamond"—a special plot on Carlos's Finca El Cerro that has earned recognition among the world's finest coffees. When we first encountered this microlot, we knew we'd found something extraordinary.

The Experience

Close your eyes and take your first sip. You'll be transported to a kitchen filled with the aromas of holiday baking—cinnamon and gingerbread dancing together in perfect harmony. This coffee arrives at the perfect moment—as the leaves begin to turn and the air carries that first hint of fall crispness. The warming spice notes make it an ideal companion for sweater weather, cozy mornings, and the contemplative pace that autumn invites.

The Process

Carlos employs a meticulous anaerobic fermentation process, carefully monitoring every variable to coax out these incredible flavors. After fermentation, the coffee is dried slowly—three days on patios, then eighteen more on raised beds—allowing the flavors to develop with patience and intention.

Brewing Ritual

We recommend approaching this coffee with the same gentleness Carlos shows his trees. A coarse grind, lower dose, and mindful extraction will reward you with a cup that's both bold and nuanced. Let the coffee speak to you—sometimes the most profound experiences come from the simplest preparations.
