This microlot comes from a blend of Antigua valley estates and smallholders—all processed at the renowned Los Volcanes–CAMEC wet mill in Guatemala. Their central processing is backed by decades of precision—from compost to fermentation control—yielding consistent clarity and refined expression.
Process & Craft
Cherries are depulped upon arrival, then fermented for up to 72 hours in temperature‑controlled ceramic tanks, closely monitored by density, temperature, and sensory cues. After fermentation, beans are cleaned, graded, and dried under careful conditions.
