In the Gedeo highlands of southern Ethiopia, between 1,700 and 2,200 meters, smallholder families tend heirloom coffee in the shade and carry their cherries to the washing station the same day they are picked. It is certified Fair Trade and Organic, grown without synthetic inputs and traded so more of its worth stays with the families who raise it. The coffee is fully washed and dried slowly on raised beds, the careful process that gives Yirgacheffe its signature clarity. We roast it light, so nothing is covered over. The cup opens with bergamot and jasmine, moves through green tea and lemongrass, and finishes clean and luminous, like light through a window.
