From Karatu, Tanzania, on the outer ridges of the Ngorongoro caldera. A washed micro lot grown by siblings Neel and Kavita Vohora on their Gaia estate, made from Simba, an Ethiopian landrace selection Neel has spent years cultivating and finally gave a name.
The cherry macerates whole for three days, then ferments and washes clean before drying slowly on raised beds. The cup is savory and silky, with miso, maple syrup, and kettle corn up front, herbal brightness and a buttery texture underneath, and a touch of jasmine and caramel at the edges.
