A running list of Illinois roasters we admire, kept honest and kept short

Search "Illinois coffee roasters" and you will mostly find ranked lists, one roaster crowned better than the next. We are not going to do that here.

Coffee people tend to root for each other. Every roaster on this list is chasing the same thing we are: a good cup, sourced honestly, roasted with care. This is a neighborly list, not a competitive one. If you drink coffee in Illinois, you are lucky; there is a lot of good work happening here, most of it in Chicago, some of it out in the suburbs where we are.

Illinois Roasters Worth Knowing

No rankings, no order of preference; just roasters we could verify are real, currently roasting, and worth a bag.

Metric Coffee, Chicago

In Fulton Market, Metric still roasts on a 1961 Probat the founders restored by hand, chasing a clean, balanced cup and real transparency with the farmers who grow it.

Dark Matter Coffee, Chicago

Dark Matter treats every coffee release like a track on an album, roasting bold, unconventional profiles out of its Humboldt Park roastery and its Western Avenue flagship cafe, The Mothership.

Intelligentsia Coffee, Chicago

One of the roasters credited with sparking America's third wave of coffee, Intelligentsia now roasts every order for its cafes and wholesale accounts out of a large facility in Bedford Park.

Passion House Coffee Roasters, Chicago

Passion House sorts its coffees by genre, from easygoing ambient blends to small batch experimental lots, and roasts them at its East Garfield Park roastery.

Sparrow Coffee, Chicago and Naperville

Led by veteran roaster Chris Chacko, Sparrow roasts small batches in Fulton Market and pours them at cafes as far out as Naperville and Clarendon Hills, supplying many of the city's Michelin starred restaurants along the way.

Big Shoulders Coffee, Chicago

True to its Carl Sandburg namesake, Big Shoulders has been roasting fresh, no nonsense coffee in Chicago since 2012, with a head roaster who took the national title in 2025.

Metropolis Coffee Company, Chicago

Started by a father and son team in 2003, Metropolis roasts inside a converted bow truss building in Chicago and has picked up back to back Good Food Awards for its beans.

Brewpoint Coffee, Elmhurst

Just down the road from us in Elmhurst, Brewpoint built its cafes and its roastery around the idea that a coffee shop should strengthen the community around it, not just serve it coffee.

Spiritus Coffee, Lombard

And here in Lombard, we roast in small batches with a mission built into the model, since proceeds from our Still Here blend support local mental health and recovery organizations and our fulfillment work is done by students from the S.E.A.L. Adult Transition Program.

An Illinois List, Not a Final One

This is not every roaster worth knowing in this state; it is just the ones we could speak to honestly in one line each. Illinois has a deep bench, from Chicago's biggest names down to small rooms like ours roasting a few miles from the city.

If we missed a roaster you love, we would genuinely like to hear about it. Coffee is one of the few businesses where a bigger community makes everyone's cup better.
