Colombia Valle del Cauca Decaf

Sugarcane Process | Medium Roast

The ritual doesn't end when the sun goes down.

The Story

Between two UNESCO World Heritage Sites—the National Park of Tatama and the Serrania de los Paraguas—lies Valle del Cauca, one of Colombia's most precious biological conservation corridors. Here, over half a million smallholder families tend their coffee farms on volcanic mountainsides, where stable microclimates and elevations reaching 1,750 meters create the perfect conditions for exceptional coffee.

This decaf comes from those same farms, then travels through a remarkable transformation. Using ethyl acetate naturally derived from Colombian sugarcane—the same sugarcane that grows in the valleys below—up to 97% of the caffeine is gently removed while preserving everything that makes this coffee worth drinking. It's a process that honors both the coffee and the land it comes from.

The Experience

Tasting Notes: Milk Chocolate, Toasted Almond, Brown Sugar, Gentle Citrus

This is what decaf should taste like—no compromise, no apology. The cup unfolds with the rich warmth of milk chocolate and toasted almonds, grounded by a brown sugar sweetness that feels like coming home. A whisper of citrus brightness keeps things interesting, reminding you that this is Colombian coffee at its core, just without the buzz.

Full-bodied and satisfying, this decaf carries the weight and presence you expect from a great cup. It's coffee that invites you to slow down, to savor the moment, to extend your ritual beyond the constraints of caffeine.

The Process

Smallholder farmers across Valle del Cauca carefully harvest Caturra and Castillo varietals at peak ripeness, processing them through traditional washed methods. The green coffee then undergoes sugarcane decaffeination—a method that uses naturally-derived ethyl acetate to remove caffeine while protecting the delicate flavor compounds that make Colombian coffee distinctive.

It's a process rooted in place: sugarcane from Colombian valleys meeting coffee from Colombian mountains, working together to create something that serves both flavor and function.

Brewing Ritual

This coffee deserves the same care you'd give any exceptional cup. Whether you reach for pour-over, French press, or drip, approach it with intention. The beauty of decaf is the freedom it offers—enjoy it in the afternoon without hesitation, make it part of your evening wind-down, or simply drink it all day long if that brings you peace.
