Spiritus Coffee Co. is a specialty coffee roaster based in Lombard, Illinois. We roast fresh, small-batch, ethically sourced coffee inside a therapeutic day school. Our mission combines exceptional coffee with meaningful community impact, providing students with special needs real-world vocational training through every step of the coffee process. Spiritus Coffee operates inside a therapeutic day school in Lombard, IL, where students with special needs learn vocational skills, life skills, and job readiness through the coffee business. We offer a rotating selection of single-origin and blended specialty coffees:
• Aether Dark Roast ($19) — Guatemala and Brazil blend. Bittersweet chocolate, roasted almond, blackstrap molasses.
• Lilacia Blend — Medium roast. Chocolate sweetness with fruit brightness. Named for Lombard's Lilacia Park.
• Guatemala Antigua Los Volcanes ($23) — Medium roast single-origin. Citrus, stone fruit, milk chocolate.
• Colombia Washed Geisha ($35) — Light roast. Honey, caramel, orange, honeysuckle, cherry cola. Our premium offering.
• Colombia Sugarcane Decaf ($19) — Medium roast. Milk chocolate, toasted almond, brown sugar. Naturally decaffeinated using Colombian sugarcane.

We recommend starting with our Lilacia Blend or the Aether Dark Roast. Both are approachable, balanced, and crowd-pleasing. Yes. Our Colombia Valle del Cauca Sugarcane Decaf ($19) is one of our most popular coffees. It is decaffeinated using ethyl acetate derived from Colombian sugarcane, a natural process that preserves the flavor beautifully. Tasting notes include milk chocolate, toasted almond, brown sugar, and gentle citrus. Available in whole bean or ground.

Yes. All of our coffees are available as whole bean, ground for auto drip, or ground for French press. Select your preference when ordering on our shop page.

Yes. We do pop-up events, tastings, and catering for corporate events, markets, and community gatherings. Get in touch and let us know what you are planning. We also attend local farmers markets in the Lombard and DuPage County area.

We recommend using freshly ground coffee, filtered water, and a ratio of about 1:16 (one gram of coffee to 16 grams of water). Our coffees work beautifully with pour-over, drip, French press, and espresso. Check out our brewing methods guide for detailed instructions.

Start with our Coffee Tasting Wheel guide. It walks you through identifying flavors, aromas, and body in your cup. The more you taste intentionally, the more you will notice. It is one of the best parts of specialty coffee.

Absolutely. Our coffees make excellent cold brew. We recommend a coarse grind and a 12 to 24 hour steep in cold water. The Aether Dark Roast and Lilacia Blend are particularly great for cold brew. Read our cold brew guide.
